Michelin chef for Churchtown

The newly-refurbished Horns Inn in Churchtown is to be run by chef to the stars and former Michelin star award winner, John Noon, and his partner Jeni Perrin.

John has 45 years’ experience in some of the best kitchens in the country.

He trained at the Savoy and the Escoffier Institute in France, and went on to work at The Westbury in Mayfair, where he was made chef decuisine at just 26, and the Red Cube in Leicester Square where he was executive chef and catered for Prince Charles’s Party in the Park aftershow party.

It was under John’s direction that Lancaster’s Ma Cuisine was awarded a Michelin star and where a documentary on his career was filmed for Sky TV’s Dining Out series.

John has prepared meals for celebrities including The Beatles, Roy Orbison, Phil Collins, Jerry Springer and The Spice Girls.

More recently John has run The Montreal in Stanley Street, Liverpool, which under his stewardship built a reputation for great food.

Jeni, who will be responsible for front of house, has over 25 years’ experience years running large branded hotels with carvery and gastro style pubs around the country.

John and Jeni’s vision for The Horns Inn is to create a traditional country pub with great food at affordable prices, excellent service with a friendly and welcoming atmosphere.

John said: “It’s all about effort at the end of the day. I always put in 110 per cent and that’s what customers will see when they come to The Horns Inn.

“Everything will be made from scratch, from the sauces to the pastries. I want people to come to The Horns Inn and say ‘that was amazing.’ The food will be fantastic and at competitive prices.

“We’re going to offer different and exciting pub food, all the ingredients for which will be locally sourced.”

Some of the dishes John plans for The Horns Inn include: King Prawns with Horseradish and Ginger Butter;Black Pudding on a Sweet Potato Fondant with Apple Compote and a Red Wine Jus; Pugh’s of Garstang Roast Suckling Pig; Steak and Mushroom Pie and a Cheese and Onion Terrine Pie with Suet Pastry, and Smoked Oysters with Julienne of Vegetables baked with Smoked Applewood Cheese.

The Horns Inn is currently undergoing a major £370,000 refurbishment and is due to open mid March.
